Munchie Mondays ~ Sticky Chicken Drummettes

Approximately 25-30 Chicken Drummettes (this is important, otherwise they aren’t as good, wings are ok, but drummettes make it better)

1 cup brown sugar

1/2 cup China lily soy sauce

1 tsp ginger powder

1 tsp Worcestershire sauce

1 tsp garlic powder or 1 tsp of chopped garlic

1 tbsp sesame seeds

Hot sauce to taste…we like ours hot baby so I usually use 2-3 tablespoons of  Franks Hot sauce!!

Place chicken in a casserole dish, big enough to get all the chicken into snuggly. They marinate better this way.

Add the next ingrediants together to make marinade.

Pour over wings.

I let mine sit as long as possible in the fridge, the night before is awesome, but you don’t have to let them marinade at all if you don’t have the time. They will still be amazing.

Give them a little tickle a couple of times throughout your marinading period, move them around and get everybody covered well :)

Preheat your oven to about 375 degrees.

Bake them for about 40 minutes on the lower temperature. Once they are cooked, I put the oven on broil and put them back in the oven for about 10 minutes maybe a bit more, I like mine crunchy. Keep an eye on it on broil though, they are easy to burn.

Once they are cooked to your preference, take them out of the oven sprinkle gently with sesame seeds and let them sit for about 15 minutes.

I know this will be nearly impossible, because it is killing you to wait. They look and smell amazing.

But do it.

They get stickier and sweeter and more delicious if you wait, I promise.

Then add a greek salad like this…

Delicious!!!!

Munchie Mondays ~ Baked Candied Style Salmon

This recipe makes the salmon juicy and almost candied tasting…your family will love it!!

Ingrediants:

1 Salmon cut into chops

1 cup brown sugar

1/2 cup soya sauce

2 cloves finely chopped garlic

2-6 drops hot sauce, depending on how hot you like it!!

1 tsp ginger chopped finely (you can also use ginger powder if you like)

Directions:

Put salmon chops into a casserole dish so they fit in snuggly. Mix remaining ingrediants together and stir well, pour over salmon chops.

Bake in a 350 degree oven until salmon comes apart easily. I find it depends on the thickness of the chops, but usually around 25-30 minutes for a two inch thick chop.

Serve with Grilled Asparagus (I just put some good quality olive oil and some garlic in a pan and fry it up…yummy) and rice or pasta. Delicious and super easy and your kids will devour it!!

A pickle jar full of fat…

So now what do I do with it?

I don’t mean a little pickle jar,  ’cause I really like pickles as you well know, and I buy the  BIG jars.

I have been putting my grease in this jar since I moved in here. It is a good thing that it took me three years to fill it up, I think….

At the same time it terrifies me a little, no actually it terrifies me a lot.

That is a huge amount of fat…and grease. GAH…

So who’s great idea was it to fill a jar up with grease anyways? I am gonna blame my Mom…I don’t know why, I just have no idea who else would have told me to do that.

So really…now what?

I can’t really throw it in the trash can I? It weighs about 20 pounds…

You can’t recycle it…for sure.

Should I bury it in the yard, 16 feet down, in the jar..and then in 20 years when they are digging around out there, they will find the jar of fat?

Kind of like when we found the Porn Video in my basement floor???

Only maybe not as funny as that…

and fatter.

And really, what else do you DO with it?? It is disgusting, I wouldn’t want to try and take it OUT of the jar. Mind you, it isn’t solid so it would just kind of glump out…but WHERE?

It will attract unwanted wildlife…like rats, I think…and I am sure bears would dig it…and every fucking dog on the block would smell it…

I googled it, and a lot of people cook other stuff with it…ya. NO.

Maybe if I had intention of that in the beginning, but I didn’t and after three years, I am going to say there is probably a million different disgusting things in there that I do NOT want to consume.

Apparently people make cookies, bourbon, bacon flavored veggies or mayonnaise with it. Really?

Yuck, you people are gross.

The only one that looked vaguely doable was the bird suet. But I am lazy, so forget it.

I am not going to be responsible for giving a bird a jammer from my bacon fat.

I have a not quite full garbage can this week, maybe if I put it in the middle of the nasty blanket I am throwing away, they won’t notice the gross jar of fat that the crazy woman on the highway threw away…

I don’t want to be that girl, but I probably already am, so I guess there is nothing to lose. Unless they don’t take it. Then I am screwed.

Then I WILL bury it…without the jar of course, that would just be wrong.

But I am going to try and get away with the garbage can first…cause it’s gross, and I don’t want to be responsible for it anymore…

I need a new way to dispose of my fat.

If you have any suggestions, please feel free…we don’t want a repeat of this in two more years…

I would appreciate the input…really I would…

Munchie Mondays ~ Potato Pancakes

This is another one of my favorite comfort foods…I can eat them anytime. LOVE. LOVE. LOVE them. They are super easy to make too!!

2 cups grated potatoes

3 eggs

1 1/2 tbsp flour

1 to 3 tsp finely grated onion

Place grated potatoes in a strainer and squeeze out excess water, pat dry on a piece of paper towel. In a bowl mix potatoes, beaten eggs, flour, salt and onion.

Shape into patties, fry…

Serve hot with butter and ketchup…

Mmmmmm…yummy!!

New England Clam Chowder ~ Munchy Mondays

1 large tin of baby clams with juice

2-4 tbsp of bacon fat

1 small onion

2 cups cubed potatoes

1 1/4 tsp salt

2 cups boiling water

2 tbsp butter

2 tbsp flour

Freshly ground pepper

1 cup milk

6 pieces of crunchy bacon, cooked

Fry out pork. Remove scraps and reserve for garnish. Saute the onion in bacon fat until translucent, add the potatoes, salt and boiling water.

Cover and simmer until potatoes are cooked approximately 12-14 minutes.

Make a cream sauce with butter, flour, pepper, milk and juice from clams. Add the clams to this, and when potatoes are done, combine the two mixtures.

Heat and serve with fresh baking soda biscuits.
